I figured they drop from a boss but where is that?
Is there a list of bosses and there locations?

All unique charms are dropped from set bosses. I'm not 100% sure if there's a list already.
Cow King drops:
Gheed's Fortune (NM)
Annihilus (Hell)
Hell Act Bosses drop:
Andariel's Soulstone
Duriel's Soulstone
Mephisto's Soulstone
Diablo's Soulstone
Baal's Soulstone
Samhain (A5 - Frozen Citadel path started from Ancient's Way):
Gift of the Dead (Norm)
Prize of the Dead (NM)
Soul of the Dead (Hell)
All Hearts are dropped by the Land of Shadows bosses.
LoShadows is reached by cubing keys occasionally dropped by Hell sub-bosses (Countess, Ardual, etc).

That's interesting information.. a side question: Can you go kill the Cow King more than once if you go grab the mats to make the portal again? (Solo Edition)
